the weather here has been rainy for a week now. I kind of have blog block--I have a few good ideas, but having trouble finding the photos. A few days ago I made these easy & delicious enchiladas--they have become a weekly dinner since I found the recipe.
Don't they look yummy?

Yes they do - where's the recipe?
I thought maybe you were suffering from blog block when we hadn't heard from you for awhile. Some days it just isn't there.
The enchiladas definitely look yummy! I'm sure they beat the ones I had today at Taqueria Guadalajara. I'll post about that soon.

They do look yummy. I made enchiladas verdes today - using the chicken al carbon from Pollo Mexicana and Miguel's homemade salsa verde. We do them on the top of the stove - quick, easy, and yummy!
