I Wish I had Smell-o-vision--Again!

I posted this recipe a few years ago, but I think it deserved another  post!  I just put it together in the slowcooker for supper tonight.   It's definitely is winter around here( they are predicting 40's here this coming week though); there's a crispness in the air ; the woodstove is going and I've gotten out the crockpot! Am making Autumn Harvest Pork Loin & it smells heavenly! The ingredients sound like a weird combination, but it is delicious......
1 c. apple cider or apple juice
1 1/2-2 lb. pork loin
salt
pepper
2 large Granny Smith apples, peeled & sliced
1 1/2 whole butternut squashes, peeled & cubed *
1/2 c. brown sugar
1/4 tsp. cinnamon
1/4 tsp. dried thyme
1/4 tsp. dried sage
Heat cider in a hot skillet. Sear pork loin on all sides in cider. Sprinkle meat with salt and pepper on all sides. Place in slow cooker, along with juices. Combine apples, and squash. Sprinkle with brown sugar and herbs. Stir. Place around pork loin. Cover and cook on low 5-6 hours. Remove pork from cooker. Let stand 10-15 minutes. Slice into 1/2" slices. Serve topped with apples and squash.
* I use a bag of frozen cubed butternut squash

Ann, I've been making a pale version of that with apple cider, but no apples and butternut squash. Just the normal potatoes, carrots, and onions. Can't wait to try your version!
